The Backcountry Kitchen: How We Fuel the Fun

At Western Spirit, we take our riding seriously—but we take our menus just as seriously. We believe that after a day of conquering singletrack or climbing into the clouds, you shouldn’t just settle for “camping food.” You should sit down to a gourmet meal that’s better than what you’d find in most restaurants.

Our Guides: From Trail Experts to Master Chefs

Our guides aren’t just Wilderness First Responders and expert mechanics; they are certified food handlers and incredible backcountry cooks. Whether it’s a Dutch oven dinner in the desert or a fresh, crisp salad in the mountains, our team handles the planning, the shopping, the prepping, and—best of all—the cleanup.

I honestly don’t eat nearly this well for all three meals of the day in a normal week at home. Full stop.

The Cowboy Coffee Tradition

Rise & Shine: The Cowboy Coffee Tradition

There is nothing like the smell of fresh coffee brewing as the sun hits the canyon walls. Wake up to our legendary “cowboy coffee,” fresh fruit salads, hot pancakes, sizzling bacon, and organic yogurt with granola.

Mid-Day Fuel: The Famous Western Spirit Salads

Forget the smashed PB&J. Our support vehicles rendezvous with the group to provide a spread of custom sandwiches and our famous, giant Western Spirit salads. We pack in the fresh veggies and protein to keep your legs moving and your energy high for the afternoon miles.

Dutch Oven Dinners

The Main Event: Dutch Oven Dinners

As the stars come out, the Dutch ovens come out. From perfectly grilled salmon and savory stir-frys to deep-dish pizzas and hearty pastas, our dinners are designed to be the ultimate reward.

The Sweetest Finish: Legendary Desserts

You’ve earned it. Whether it’s our famous Dutch Oven chocolate brownies, freshly baked cakes, or a surprise treat by the fire, we make sure every day ends on a sweet note.

Legendary Desserts

The food was WAY better than I expected. When you are served Dutch Oven brownies in the woods, what more can you ask for?

Frequently Asked Questions: The Western Spirit Kitchen

We believe everyone deserves to eat well, regardless of their dietary needs. Our guides are masters at accommodating:

  • Vegetarian & Vegan (we know the difference between tofu and tempeh!)
  • Gluten-Free
  • Dairy-Free
  • Specific Allergies

Tailored Menus for Every Rider

We know that a specialized diet shouldn’t mean a compromise in flavor or energy. Whether you are strictly plant-based, gluten-intolerant, or navigating complex food allergies, our guides are seasoned pros at cross-contamination safety and creative substitutions. We don’t just “leave the meat off” for vegetarians; we craft protein-rich, satisfying alternatives that often leave the rest of the group eyeing your plate. From sourcing the best gluten-free pastas to ensuring our snacks are nut-free for those with sensitivities, we handle the logistics so you can focus on the trail. Just fill out your rider preferences during registration with your specific needs, and we’ll take it from there—no stress, no hunger, just incredible food tailored to you.

We provide a massive “snack bin” filled with everything from energy bars and nuts to fresh fruit and salty treats. However, if you have a very specific “magic” gel or bar that powers your climb, feel free to bring a small stash!

Our support trucks are equipped with high-efficiency cooling systems and heavy-duty coolers. We stock with fresh produce to ensure your lettuce is crisp and your dairy is cold, even in the middle of the backcountry.
In over 36 years, we’ve never had a rider go hungry. We calculate our portions based on “cyclist calories”—which means we pack significantly more food than a standard camping trip. Seconds (and thirds) are always encouraged!
We provide plenty of clean, filtered water and electrolyte replacement, “Tailwind” at every stop. You just bring the bottles or hydration pack; we’ll keep them topped off.
